Can you start a paper with a definition?

Don't start with a dictionary definition It can be tempting (and very easy) to start your essay with something like, "According to Merriam-Webster.com, happiness is a state of well-being and contentment." Yeah, it's an easy way to start your paper, but it certainly isn't very interesting.
